Fresh Pasta Packaged Right!>
Packaging fresh pasta, including fettuccine, linguine and macaroni, when done right, increases the shelf life of your pasta product. Your challenge as a quality professional and technical expert in the Fresh Pasta Industry are many. You need to package your pasta products into a modified atmosphere package (MAP) in order to inhibit mold and yeast growth. You need to ensure your package is checked for leaks and has the proper headspace gas concentration; because in air (i.e. essentially no MAP) your shelf life would be short (~1 week) compared to what it would be in a good MAP package (3-4 weeks). Packaging fresh pasta is complex and there is a lot to control and monitor in your packaging to ensure your pasta lasts.
