Fresh Meat Packaged Right!

Packaging fresh meat, including beef, pork and poultry, when done right, increases the shelf life of your meat. Your challenge as a quality professional and technical expert in the Fresh Meat Packaging Industry are many. You need to package your meat products into a modified atmosphere package (MAP) in order to prevent discoloration (especially for red meats) and inhibit bacterial growth. You need to ensure your package is checked for leaks and has the proper headspace gas concentration; because in air (i.e. essentially no MAP) your shelf life can be 1/3 to 1/4 of what it would be in a good MAP package. Packaging fresh meat is complex and there is a lot to control and monitor in your packaging to ensure your fresh meats last.
